Food safety
For food safety, the CDC recommends proper fruit handling and preparation to reduce the risk of food contamination and foodborne illness. Fresh fruits and vegetables should be carefully selected; at the store, they should not be damaged or bruised; and precut pieces should be refrigerated or surrounded by ice.
Storage
All fruits benefit from proper post harvest care, and in many fruits, the plant hormone ethylene causes ripening. Therefore, maintaining most fruits in an efficient cold chain is optimal for post harvest storage, with the aim of extending and ensuring shelf life.
Lemon Peel
n Morocco, lemons are preserved in jars or barrels of salt. The salt penetrates the peel and rind, softening them, and curing them so that they last almost indefinitely. The preserved lemon is used in a wide variety of dishes.
Juice
Lemon juice is used to make lemonade, soft drinks, and cocktails. It is used in marinades for fish, where its acid neutralizes amines in fish by converting them into nonvolatile ammonium salts. In meat, the acid partially hydrolyzes tough collagen fibers.
Nutritional value
As excessive intake of added sugar is harmful and fruits are relatively high in sugar it is often questioned whether fruits are actually healthy food. It is in fact difficult to get excessive amounts of sugar (e. g. fructose) from fruits as they also contain fibers, water and have significant chewing resistance. Lemon oil is extracted from oil-containing cells in the skin. A machine breaks up the cells, and uses a water spray to flush off the oil. The oil/water mixture is then filtered and separated by centrifugation.
